How to use moringa powder: everyday Indian recipes
Short answer
Start with half to one teaspoon a day, stirred into food you already make: dal, paratha dough, chutney or buttermilk. Add it towards the end of cooking to keep its colour and flavour. Moringa leaf powder is naturally rich in protein, fibre, calcium and iron.
What does moringa powder taste like?
Earthy and grassy, a little like strong spinach, with a mildly bitter finish. It disappears easily into dishes with bold flavours: dal tadka, garlic, lemon, coriander or tamarind.

What's in it?
Moringa (drumstick) leaves are one of the most nutrient-dense greens, and drying concentrates them further:
- Protein: a 2021 laboratory analysis found leaf powder to be about 25% protein and 12% dietary fibre.
- Calcium and iron: a 2025 review lists about 2,000 mg calcium and 28 mg iron per 100 g of leaf powder.
Values vary a lot with the soil, season and drying, so treat these as typical rather than exact. A teaspoon is only a few grams: think of moringa as a daily boost to a meal, not a meal replacement.
How much to use
Start with ½ teaspoon a day and build up to 1 teaspoon as you get used to the taste. Studies of the leaves' mineral content suggest any concern only arises at amounts far beyond kitchen use (one safety study suggested staying under 70 g a day).
If you're pregnant, breastfeeding or on regular medication, check with your doctor before adding any herbal powder to your daily routine.
Easy ways to add it
- Dal: stir ½ teaspoon into the cooked dal after the tadka, off the heat.
- Paratha or roti: knead 1 teaspoon into each cup of atta.
- Chutney: blend ½ teaspoon into coriander-mint chutney.
- Buttermilk (chaas): whisk a pinch in with roasted jeera and salt.
- Soups: stir in just before serving.
A simple moringa dal
Cook 1 cup of toor dal with turmeric until soft. Make a tadka of ghee, jeera, garlic and dry red chilli, and pour it over. Take the pan off the heat, stir in 1 teaspoon of moringa powder, and finish with lemon juice. Adding the powder off the heat keeps its colour green and its flavour fresh.

Frequently asked questions
- Can I cook moringa powder or only add it raw?
- Both work. Adding it at the end of cooking, or off the heat, keeps its colour and fresh flavour better.
- How much moringa powder per day?
- Start with half a teaspoon and build up to one. It's a food, not a medicine; if you're pregnant, breastfeeding or on medication, ask your doctor first.
